"Our family loves this vegan cheese sauce. We're not usually that excited with fake cheeses, but this one has been the exception. Tastes great over nacho chips, baked potatoes, in vegetarian tacos, etc. This recipe has helped us enjoy more vegan meals in our home. We got this recipe from our friend Connie Yroc after she shared this wonderful cheese sauce with nachos with our family one day. After almost losing the recipe last week I realized I must post it right away, because we make it so frequently! Hope you enjoy it. Thanks Connie!"

  • 3 12 cups water
  • 2 cups raw cashews
  • 2 lemons, juice of
  • 34 teaspoon paprika
  • 1 teaspoon garlic powder (heaping)
  • 1 teaspoon onion powder (heaping)
  • 3 teaspoons salt
  • 1 (7 ounce) can pimientos (including the liquid)
  • 12 cup nutritional yeast (not brewers yeast!)

  • Soak raw cashews for a few hours (this will help the sauce be more smooth and less grainy from the nuts though the flavor is good either way).
  • Put 2 1/2 cups of water into a blender with all of the ingredients and blend until smooth.
  • Pour the blended mixture into a saucepan and add the remaining water.
  • Heat the mixture in a saucepan for about 20 minutes.
  • Stir continually to prevent it from burning.
  • Add water to desired consistency (optional).
  • Use as a nacho cheese dip or as a replacement for cheese on other yummy foods!

  1. Love this recipe! But, because I'm lazy, I don't put on the stove. I just let it run in my Vitamix for about 5 mins and it's steaming warm and perfect texture:)

  2. Love! Love! Love! I didn't have pimentos, so I used a 7oz can of chipotle chilies in Adobo sauce. Also used smoked paprika and doubled the garlic and onion powders, omitted the salt and only used 1Tbs of lemon juice. Jeezy, is it fantastic. Even my hubby who doesn't like my hippy food loves this stuff. I also used my vitamix to cook it. Thanks for the recipe.

  3. Wow this recipe is AMAZING! I didn't have pimentos so I omitted them, but I added a couple of squirts of SriRacha. I was a cheese lover before I went vegan, but I would prefer this to any jarred nacho cheese. Seriously if you've been meaning to try a non dairy cheese sauce just go ahead and make this.

I made this in hopes that it would taste the same as The cashew cheese they make at my favorite vegan restaraunt “Spiral Diner Bakery” in Dallas ... surprise I found the recipe yayyyyy for me lol with so many different versions out there I’m glad I picked this one baecause it taste just how I wanted it too , it’s fenomenal guys.. I use it as a dip with chips or even make it in pasta dishes as u can see in the picture I uploaded using this cheese .. my kids are picky eaters & even they said I need to make this cashew cheese more often .. highly recommend you will be glad you made it & if your crazy about it like me u will make it a staple in your kitchen!

  5. I thought this was a decent recipe. I had to make in two batches and the first was extremely runny and way too lemony. I adjusted the second batch by adding some more cashews and omitting the lemon. Added some almond milk and some flour to thicken up the consistency.

  1. I use half oat or rice milk and half water for more creaminess and richness. I usually use less liquid than called for since I like my cheese to stick well to the chip. Extra nutritional yeast and less lemon (about3 TBSP). Also white pepper works in place of black.

  5. This is awesome!! I didn't have pimento so I roasted half a red pepper, subbed half the water for canned coconut milk, used a little less lemon, half the salt and double the nutritional yeast and it's amazing. The red pepper brings so much great flavor.

Update: We've moved back to the states, and are experiencing the joys of living in Wenatchee, WA for the first time! I'm spending most of my time in the kitchen canning, freezing, and drying fruit now and loving it!We are a couple, Jason and Mollie, that loves to cook together. Our girls love helping us cook...and eat! We're vegetarian and love eating healthy without missing any flavor! We try to eat mostly vegan, so we have many vegan recipes posted. We are world traveling missionaries and students that have visited many countries and have lived in the States, South Korea, and are currently in the Philippines. So we always need to adjust our menu based on the food available.
