I have made this about six times since it was posted and is probably in my top ten dishes. I don't eat breakfast so I sometimes will make eggs for dinner. This is the perfect weeknight meal that is quick and easy. I followed the recipe as written. I like to sauté the turkey in the bacon grease before I add it to the omelet. The bagel seasoning, sun dried tomatoes, and chives create a unique and tasty experience I would not have tried other wise. Thank you Diet Doctor!

Sounds great, Stephanie! Love the idea of cooking the turkey in bacon grease.

What is ‘bagel seasoning’? I am from the Netherlands and not familiar with bagels or bagel seasoning.

Why is it "Everything but the bagel?" Is it a famous bagel filling? Like smoked salmon and cream cheese?

"Everything bagels" are bagels topped with all the toppings like onion, garlic, salt, poppy seed, sesame seed and more. So this bagel has all of the flavors but none of the bagel!
